US Route 40 evolved from a footpath to an important road linking the eastern seaboard to the west. It brought travelers from Baltimore to San Francisco through Denver, where it is known as Colfax Avenue. Ever since the mid-20th century, it has experienced a lot of change, which continues to this day. Riding down Colfax, a variety of challenges are on display, but dedicated food lovers will find varied and delicious surprises that might otherwise be hidden in plain sight.

Linda and Cindy are long-time friends who are semi-retired and like to eat. They scouted breakfast spots along US 40 (aka Colfax) as it runs through the Denver area. With the goal of bringing people together and supporting local businesses, these seasoned Food Scouts invite you to join them on a breakfast road trip along Colfax from east to west, visiting a different place every month.
